On Monday, we offered some fun football cupcake ideas. Today we thought we’d talk about football biscuits. Whether you have one on its own or like to dunk it in your tea, biscuits are a lot of fun to make and even more fun to eat.
Football Biscuits
Get your kids in the kitchen with this simple biscuit recipe. It can be adapted any way you like and there are so many fun ways to decorate them.
Basic Biscuit Recipe – Makes about 24 biscuits
For the biscuits:
- 100g unsalted butter, softened
- 100g caster sugar
- 1 medium free-range egg, lightly beaten
- 275g plain flour
- 1 tsp vanilla extract
For the water icing:
- 400g icing sugar
- 3-4 tbsp water
- 2-3 drops food colourings
Method
-
Preheat the oven to 190C/170C Fan/Gas 5. Line a baking tray with greaseproof paper.
-
Cream the butter and sugar together in a bowl until combined.
-
Beat in the egg and vanilla extract, a little at a time, until well combined.
-
Stir in the flour until the mixture comes together as a dough.
-
Roll the dough out on a lightly floured work surface to a thickness of 1cm/½in.
-
Using biscuit cutters, cut biscuits out of the dough and carefully place onto the baking tray.
-
Bake for 8-10 minutes, or until pale golden-brown. Set aside to harden for 5 minutes, then cool on a wire rack.
-
For the icing, sift the icing sugar into a large mixing bowl and stir in enough water to create a smooth mixture. Stir in the food colouring.
-
Decorate your biscuits and set aside until the icing hardens.
Mix it up
This is another versatile recipe and can be easily adapted to add different flavours. Add some lemon, orange, or lime zest for a nice citrus kick. Replace some of the flour with cocoa powder for a lovely chocolate biscuit. Or, if you’re fine with nuts, change the vanilla extract for almond extract and roll the dough in finely chopped almonds.
Double up
If you want even more of a treat, why not turn these into sandwich biscuits? Put buttercream, jam, ganache, cream cheese, or even ice cream between two biscuits.
Icing
To create some more intricate designs, you might need to make two different consistencies of icing. A slightly thicker consistency that you can use to pipe your outline and a thinner consistency that you can use to “flood” your design. For further advice, take a look at this biscuit icing tutorial.
Decoration
There are plenty of great ways that you can give biscuits a football twist but if you need a few ideas why not try:
- Decorating your biscuits in your club colours.
- Decorating the top of your biscuit to look like a football. Bonus points for copying your favourite Pendle footballs.
- Cut out your biscuits in the shape of a football shirt and shorts. Then decorate to match your own Pendle football kit
- If you’re really arty, have a go at copying your club badge.
- Don’t limit yourself to round biscuits, try these rectangular biscuits that look like a football pitch.
- For an added treat, try these surprise football biscuits.
